Claim The number of vegans in the UK has risen from half a million in 2016 to 3.5 million today.

Conclusion 3.5 million is almost certainly too high. The phrasing of the survey it’s based on means it could include people who were previously vegan but no longer are. The best available research we know of (from 2016) estimated 540,000 adults in Britain are vegan.
